Alcoholic fermentation at room temperature, 
Blocking of malolactic fermentations,

Aging on lees for 8 months then on slats for 5 years 
Disgorging 6 months before marketing

on 01/20/2023 Fruit Day 
Wine   dosed at disgorgement  2 g/l 

Tasting: 

A precise entry followed by a palate with the expression of a tonic and generous wine accompanied by a fine balanced bubble
