Vinification:

 

Small volume press, natural settling

Alcoholic fermentation in American oak barrels

at room temperature

 

Aged in barrels for 8 months then on slats for 5 years

Disgorging 12 months before marketing

Disgorging liqueur dosage at 6 g/l

Disgorging on 04/07/2022 Fruit Day

 

Tasting:

 

Harmony revealed by aromas of candied citrus fruits, apples and white flowers enhanced by a woody breath.

Maturity is revealed by these notes of toast and cocoa. Subtly woody finish accompanied by a minerality.

Perfect food and wine pairing for fish, such as skate wing with parsley root cream.
